What We're Doing

We work together to continually develop and implement sustainable solutions. Through Green Thread, our environmental sustainability platform, we bring innovative and efficient solutions to life. We are passionately focused on reducing the environmental impact within our operations. Here are just a few ways we work to make our campus more environmentally conscious:

Check Local Purchasing: Did you know Dining Services sources food from many local farmers, growers and distributors? The list changes throughout the year depending on seasonality and availability. However, here is a sampling of a few of our partners:
  • Our milk, cottage cheese, and frozen yogurt are all sourced from
    Oak Farms Dairy in Dallas, TX
  • Texas Ruby Red Grapefruit
    and Collard Greens are from McAllen, TX
  • Cabbage from Hondo, TX
In support of our commitment to animal welfare, we’re proud to serve shell eggs from cage-free hens in both of our dining halls: 
Arnold Dining Commons and Lee at Umphrey Lee Center.


Check Recycling: Dining Services partners with campus to recycle paper, cardboard, and plastic from all dining locations across campus. We are committed to minimizing our environmental footprint.

Check Trayless Dining:  Did you know Dining Services has been trayless since 2007? By dining trayless, you have helped positively impact the waste stream. Dining trayless minimizes food waste, conserves energy and water, and reduces the amount of cleaning chemicals entering the waste stream.

Check Reusables: Take part in our reusable mug program to reduce waste and receive a discount on fountain beverages and coffee at the Mane Course in Hughes-Trigg Student Center and Einstein's

Check Reusable To-Go Container: Getting your meal to go from one of the residential restaurants? Take part in our Sustainable To-Go Container program, made from recycled material, our to-go boxes are eco-friendly.
  • Ask the cashier for one of the reusable containers and allow him/her to swipe your SMU ID card to check out the container.
  • Use the container for your to-go meal.
  • Bring the container back and allow the cashier to swipe your SMU ID to check the container back in.
  • You'll only be able to check out one container at a time, so be sure to bring your used one back for cleaning as soon as you can!

Check Fryer Oil Recycling: One hundred percent of dining services used fryer oil is recycled by Waste Management to be used for cattle feed and biodeisel.

Check Hydration Stations: Dining Services offers several hydration stations throughout campus. Use the filtered water stations to refresh and refuel while helping to impact your carbon footprint.

Check Recycled Content Paper: We use 30% recycled content office and copy paper in all dining locations on campus.

Check Green Cleaning: All dining locations are committed to using EcoLab daily green cleaning products in our operations to reduce the need for chemical based cleaning products and provide a healthy and safe learning environment.

Energy & Water Conservation: We train our employees each semester on common energy and water conservation practices in order to conserve precious natural resources.


Composting: Our most recent green initiative has been teaming up with SMU’s Community Garden (located between Daniel and Dublin Ave.) to provide egg shells and food rinds for composting purposes. We are proud to be able to give back to our Mustang community!es.
